  • 2 ½ cups granulated sugar

  • 1 ¼ cup water

  • Squeeze of fresh lemon juice

  • 1 tbsp rosewater

  • 1 tbsp orange blossom water

Step 1: Prepare the Sugar Syrup

  1. In a saucepan over medium-high heat, combine sugar, water, and lemon juice. Stir briefly, then allow it to come to a boil.

  2. Reduce the heat to low and let it simmer for 10 minutes until the syrup thickens.

  3. Remove from heat, stir in rosewater and orange blossom water, then set aside to cool.

Step 2: Make the Semolina Pudding

  1. Melt butter in a saucepan over medium heat.

  2. Add semolina, sugar, milk, and heavy cream, stirring continuously.
